BBQ Chicken(tofu) Pizza

I used to love BBQ chicken pizza, with the crunchy red onions, the sweet barbeque sauce, and the soft pizza dough.

Now that I don’t eat meat anymore, I wanted to try to recreate this delicious pizza for myself, with a different version of protein. I’ve recently stumbled upon the freeze and thaw method with extra firm tofu that creates a “meaty” texture. It’s brilliant! All you have to do is freeze your extra firm tofu in its original packaging, and then thaw and press for at least 30 minutes! The tofu will have holes from the ice splinters, which will allow for more absorption of any marinade you create!

Once I discovered this method of prepping tofu, I couldn’t do it any other way. 

For your BBQ Tofu Pizza, this is what you’ll need:

– Store-bought pizza dough (or make your own and cook it until its a solid crust ready for toppings)

– extra-firm tofu (frozen, thawed and then pressed for at least 30 minutes)

– 1 cup of your favorite BBQ sauce

– optional 2 tsp tomato sauce to thin out the marinade

– 1/4 cup pizza sauce

– 1/4 medium red onion

– 2 cloves of garlic, chopped

– 1 cup shredded mozzarella cheese

Steps:

After pressing your tofu, cube into bitesize pieces for pizza topping. Place cubed tofu into an container with a lid. Add BBQ sauce and optional tomato sauce to the tofu. Close the container and shake, making sure all tofu is coated. Let tofu marinate in fridge for at least 30 minutes to overnight.

Preheat oven to 425F. If you have a pizza stone, place it in the oven while it preheats.

Place your pizza crust on your baking sheet. Spread and even layer of pizza sauce over crust, leaving about 1cm of room on the edges for grip. Scatter marinated tofu onto crust (save marinade sauce leftovers for later)

Thinly slice your red onion with a mandolin or knife and sprinkle onto pizza.

Chop garlic and sprinkle onto pizza.

Use any leftover marinade to dallop onto pizza toppings.

Sprinkle mozzarella cheese on top and bake for 15 minutes or until cheese is melted and red onions appear roasted. Feel free to broil for 2-3 minutes for a bubbled cheese aesthetic.

Remove from oven and let cool for 3-5 minutes. Slice and serve!
