I grew up in a big family with a very minimal budget.
This means that most of our food was high quantity, but low quality food. If you ask any of my siblings, they’d tell you I can cook! However, if you ask anyone else, the response is much different…
I grew up making things like tater-tot casserole, and cornbread and beans – delicious, no doubt! But not very nutritious.

As I get older, and establish my life with my own family, I realize I need to be better about what I consume. I also really enjoy good food that makes me feel good! I love not feeling sluggish, weighed down, or a feeling of imminent doom after finishing dinner.
In August of 2023, my fiancé and I decided that we would try a vegetarian diet for one month, due to the surge of news articles and meat recalls all over the country. With time, we learned more about meat production and animal treatment and decided not to look back.
This was a life-changing decision!
We have both lost weight, our general health has improved, and we continue to have energy after eating without fear of the dreaded “food coma”!
Now, there have been other factors for these results, of course, but I truly believe that being vegetarian has helped me in my journey to a happy body. I’m here to share my favorite recipes with you so you can try them out, too!
