Each morning, I try to decide how I’m going to get the protein that I need, while also enjoying the food I eat. Most people will say “Eat eggs, they’re so easy and high in protein!” While that is true, I’m a vegetarian that doesn’t eat eggs. So I had to find something else that works for me.
Blueberry and Banana Nut are my two favorite types of breakfast categories. I love them both equally, and really can’t choose which one is better! Inspired by @clairehodginss on TikTok, This is an easy, sweet way to start the day!
What you’ll need:
– 1/4 cup frozen blueberries
– 1/2 tsp cornstarch
– 1/2 tsp lemon juice
– 1 packet Quakers Banana Nut Protein Oatmeal
– 2 Tbsp sugar
– 1 Tbsp water/milk (or more, depending on your crumble)
Steps:
In a small bowl, mix blueberries, cornstarch, and lemon juice together and microwave for 1 minute. Set aside.
In a separate bowl, empty oatmeal packet, add sugar, and stir together. Add water, a few drops at a time, until your oatmeal mixture comes together like a crumble. Pour the crumble mixture on top of the blueberry mixture and microwave 1 min 30 seconds.
Top with yogurt, cool whip, or a mix of the two. Enjoy!
